Chilgoza, also called jalghoza, is the pine nut of Pinus gerardiana, a pine that grows wild in the high forests of eastern Afghanistan and the Hindu Kush. Ours come in the shell: slender ivory kernels you crack open by hand, a classic winter snack in Afghan, Pakistani and northern Indian homes. Chilgoza can't be farmed; the trees grow wild at altitude.
