Afghan green raisins, called kishmish in Dari and Farsi, are shade-dried the traditional way in Kandahar. Drying them slowly out of direct sun keeps their pale green colour and gives them a delicate, floral sweetness and a softer texture than ordinary brown raisins. Serve them with almonds and walnuts, stir them into Kabuli palaw, or mix them with roasted chickpeas for nakhod-kishmish with tea.
